1. Prepare the Chicken:
– Rinse the chicken pieces and drain well and this can be done by wiping the chicken pieces with paper towels.
– Rub in the chicken a good amount of seasoning consisting of salt, black pepper, garlic powder, onion powder, and paprika. You also get to use a little hot sauce to your seasoning if you prefer more spices.
– Marinate the seasoned chicken pieces in a large mixing bowl with buttermilk ensuring the pieces are fully immersed in the liquid. Loosely tent with foil or wrap the bowl in plastic wrap and let the veggies marinate in the fridge for at least two hours or for the best results overnight.

2. Prepare the Breading:
– In a pie tray or another large mixing bowl, mix all-purpose flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder and onion powder. Mix well to combine.

3. Bread the Chicken:
– Let the marinated chicken come to room temperature from the refrigerator for approximately, 30 minutes before frying.
– To practice this, drain the chicken from the buttermilk marinade one piece at a time, and shook it gently to remove any excess.
– Coat the chicken with the seasoned flour mixture, putting it into practice as you cover all sides of the chicken. Drain the chicken and remove each piece of chicken from the pan, shake it gently to remove excess flour on it and place it on wire rack on a tray. Same procedure is followed with the rest of the chicken pieces.

4. Heat the Oil:
– If you are using a deep fryer, set the temperature to 350°F (175°C) or if you are using a large, heavy bottom pot, heat the vegetable oil or peanut oil until it reaches this temperature. The amount of oil that you ought to use should be adequate enough so that it can cover the chicken pieces to some extent.

5. Fry the Chicken:
– Seeing the chicken pieces being lowered into the hot oil causes the heat to quickly sizzle the chicken one or two pieces at a time depending on the size of the portions before using tongs to lower more pieces.
– Pan fry the chicken in portions and avoid overcrowding the pot with the chicken as this is likely to cause the temperature of the oil go down and your chicken turn out greasy.
– Now I placed the chicken pieces lower in the oil and fry it for about 12-15 minutes, turning it over once in awhile until the chicken turns a rich golden color and fully cooked. The consumption of the chicken, its internal temperature should be at least 165°F (75°C).
– As soon as the chicken is done, take out the chicken form the oil and transfer it to a wire rack that is placed over a baking sheet lined with paper towels for further absorption of the excess oil. It is preferred that it should be allowed to sit for 5 min before being served.6. Serve and Enjoy:
– Present the fried chicken hot, adorned with any vegetables or side dishes such as coleslaw, mashed potatoes, biscuits, or hot sauce.
