But you know how you love cookies and try different varieties, but mostly you just dream finding the perfect chocolate chip cookies so you make every version of them? That’s my donut quest- I want to try to find that perfect glazed baked donuts that tastes like a fried donut. Chocolate Glazed DonutsMaybe it’s not possible, but it’s worth a shot. Gooey Toffee Chocolate Chip Cookies

Chewy-crisp cookies with toffee bits and dark chocolate

The name of these was my husband’s idea. I asked him if he wanted cookies this week, he immediately wanted chocolate chip ones, and I immediately said “I like to make them a little different, so what should I add?”

“Hazelnuts!”

“Not sure where I’d even find those unshelled, babe.”

“Okay, then, toffee. Gooey Toffee Chocolate Chip Cookies!”

And so it was.

Coconut Cupcakes

Coconut cupcakes. Filled with coconut custard and topped with meringue, these are full of fresh coconut flavor!

I have made 4 different recipes for food/treats in the last few days, and they all failed. I even spent 5 hours working on a bread that ended up doughy in the middle. It was all so very, very frustrating, so I gave up on Pinterest recipes and went to the library. I loaded up on cookbooks and food magazines, plus a few health-related ones. I ended up finding an indulgent dessert recipe in my health magazine that I had to try, and it turned out perfectly! Continue reading

Creamy Strawberry Ice Cream

I warned you that there’d be a lot of strawberry recipes coming your way, right? Okay, good!

Creamy Strawberry Ice Cream- soft, sweet, packed with strawberry flavor…basically it's the strawberry ice cream you've always dreamed of!

Before this, I was pretty sure I just plain sucked at making ice cream. Even if it was good straight from the ice cream machine, by the next day it was always a rock-hard chunk and then it turned straight to freezer burn. Finally I drew on my food prep lab knowledge and added a bunch of fat and sugar. Ta-da! Creamy ice cream that’s as easy to scoop as the store-bought kind. Also, it tastes amazing. So much strawberry flavor! Did you know that ice cream actually needs a lot of sugar to keep the ice crystals small? And the cold temperature tricks your tongue, so it seems less sweet once it’s frozen. Continue reading

No Bake Lemon Strawberry Cheesecake

Fresh, tangy cheesecake topped with strawberries- no need to turn on the oven for this summer treat!
We made it out to a local U-pick farm just in time for strawberry season! It doesn’t last long around here, so I was super excited to get a few pounds of fresh berries. I asked Michael what I should make with our haul, and he said something with lemon sounded good. I had already planned on making these, so adding lemon was no problem!

Picking berries!

Reese’s Brownies

Reese's Cup Brownies- fudgy, thick brownies satisfy every chocolate craving!

My sister, Amy, bought me a bunch of Easter candy. I immediately planned on using it for baking some treats, but it took awhile to get around to. Michael loved these brownies the first time I made them, and I thought that the addition of chopped Reese’s peanut butter eggs would make them even better. It worked! The slight salty flavor of Reese’s went perfectly with the thick, sweet brownies. You could also just chop up some Reese’s cups and get the same results!

S’mores Cupcakes

S'mores Cupcakes- graham cracker cupcake, marshmallow filling, and dark chocolate ganache! YUM!

When I was growing up, my favorite thing to do in the summertime was invite a few friends to my house and put up a tent to go ‘camping’ in the backyard. I even learned how to put up our huge 3-room tent by myself at the tender age of 13! My best friend, Ariel, came to every little party I had. We lived a few miles from each other, which was awesome!

S'mores Cupcakes

There are so many funny memories from the times that we went camping, ranging from shaving cream fights and water balloon wars, to re-counting nightmares about giant pudding cup men and telling scary stories. Plus, we could be as loud as we wanted, eat tons of snacks, giggle uncontrollably, and my parents enjoyed peace and quiet inside the house! Except for the time it rained and the tent leaked so we had to go inside at 4 am.

Oh, and we always had to have a cookout just to have some s’mores!

Dessert, breakfast, and a meal are all covered in this list of 10 Pinterest recipes I love

I use Pinterest as a tool for finding new recipes, mostly. I can’t make a recipe unless I can see a picture of it, so Pinterest is like a lovely internet image search of fabulous recipes. Naturally, of the many I try, not all are winners. I adjust recipes all the time to suit what I have on hand or my personal preferences. I know I haven’t been blogging for very long (not on a consistent basis, at least), but here are my 10 favorite Pinterest recipes that I tried and enjoyed so much that I blogged about them! Follow me on Pinterest and I’ll let you know what recipes are actually worth making!
