Espresso Cupcakes


I’ve become pretty addicted to (good) coffee. I can never drink it in excess since the caffeine will make me jittery, but I drink a cup every morning now. That made me want to go back and take another look at this recipe, which never got the love it deserves from me.

I re-made them and focused on getting a good coffee flavor with plenty of chocolate notes. After reading about bacteria for my Food Fermentation class, this was a welcome distraction! I now have 11 credits for my Masters done, with 19 to go. And then, who knows, why not get a PhD?

Coconut Cupcakes

Coconut cupcakes. Filled with coconut custard and topped with meringue, these are full of fresh coconut flavor!

I have made 4 different recipes for food/treats in the last few days, and they all failed. I even spent 5 hours working on a bread that ended up doughy in the middle. It was all so very, very frustrating, so I gave up on Pinterest recipes and went to the library. I loaded up on cookbooks and food magazines, plus a few health-related ones. I ended up finding an indulgent dessert recipe in my health magazine that I had to try, and it turned out perfectly! Continue reading

The cupcakes are fluffy and light, the frosting tastes like blackberry frozen yogurt, and the lemon curd is a bright, tart center that makes the whole thing complete. Angel Food Cupcakes

Angel Food Cupcakes with a fresh whipped cream frosting!

My mom is awesome. I remember once, when I was pretty young, it was warm and rainy out one day. She told me and Amy to take off our socks and shoes and go outside to splash in puddles in the driveway. We happily obliged! She’d always let me lick the beaters when she was baking chocolate chip cookies, let me play with her jar of buttons while she sewed, made us play dough from scratch, let us make a huge mess of it on the kitchen table, and always had hot cocoa waiting for us when we came inside from sledding. So, yeah. Awesome. Basically the kind of mother I’d want to be, if I wanted kids that is.

S’mores Cupcakes

S'mores Cupcakes- graham cracker cupcake, marshmallow filling, and dark chocolate ganache! YUM!

When I was growing up, my favorite thing to do in the summertime was invite a few friends to my house and put up a tent to go ‘camping’ in the backyard. I even learned how to put up our huge 3-room tent by myself at the tender age of 13! My best friend, Ariel, came to every little party I had. We lived a few miles from each other, which was awesome!

S'mores Cupcakes

There are so many funny memories from the times that we went camping, ranging from shaving cream fights and water balloon wars, to re-counting nightmares about giant pudding cup men and telling scary stories. Plus, we could be as loud as we wanted, eat tons of snacks, giggle uncontrollably, and my parents enjoyed peace and quiet inside the house! Except for the time it rained and the tent leaked so we had to go inside at 4 am.

Oh, and we always had to have a cookout just to have some s’mores!

Samoas Cupcakes- If you like the cookies, you'll LOVE these cupcakes!

This is my favorite little creation ever. They make me very, very happy. I even made some mini ones so I could “play around with decorating”, but really I just wanted to eat them all. So all I really did was take my two favorite recipes and make these cupcakes. Ok, 3 recipes. They’re my favorite, which is actually saying something because for as many sugary treats as I make, it’s gotta be GOOD for me to eat more than one. Or to make a recipe more than once.

For my recipes, I have a board called “Best Pinned Recipes” where I move recipes I’ve tried and enjoyed so I can use them again eventually.

Lemon Meringue Cupcakes

Lemon Meringue Pie is my dad’s obsession. After making him at least a half-dozen pies, I made some cupcakes instead. I made an italian meringue to prevent weeping after I did a ton of research on why meringues weep (basically, they don’t get cooked because they don’t get hot enough from baking in the oven). Italian meringue tastes more like marshmallow to me, but it held up great for several days.
