I have made 4 different recipes for food/treats in the last few days, and they all failed. I even spent 5 hours working on a bread that ended up doughy in the middle. It was all so very, very frustrating, so I gave up on Pinterest recipes and went to the library. I loaded up on cookbooks and food magazines, plus a few health-related ones. I made seven different kinds of treats today and yesterday, but I had to share this one first. It’s my family’s favorite granola! The coconut butter gives it an amazing flavor, plus it stays together in big chunks until you want it broken down. That’s some good granola.
This is my favorite little creation ever. They make me very, very happy. I even made some mini ones so I could “play around with decorating”, but really I just wanted to eat them all. So all I really did was take my two favorite recipes and make these cupcakes. Ok, 3 recipes. They’re my favorite, which is actually saying something because for as many sugary treats as I make, it’s gotta be GOOD for me to eat more than one. Or to make a recipe more than once.
One of the best discoveries of my life was coconut butter. I read that you could make your own, but my food processor was too wimpy for that. Instead I bought a jar for the wince-inducing price of $13.99 at Whole Foods. My usual recipe starring this magical gooey coconut stuff is a coconut granola that’s a family favorite (coming soon, I promise!), but when Michael asked for chocolate chip cookies, I dreamed up this idea and then found a recipe that looked promising.
TOASTED coconut, that is…mmm. Michael fully approved of this flavor suggestion when he asked for a cheesecake and this one was bouncing around my brain.
