I know that I have a few good donut recipes already, including one that’s similar to this- Chocolate Glazed Donuts– and they’re very good, but this one’s the best. It just is. You can make any kind of glaze for it, make it in a muffin pan, put whatever mix-ins you desire in the dough (Coconut? Sprinkles? Why not?), and it’s going to turn out perfectly. Well, it’s been awhile again! I don’t have much of an excuse for not posting more often, other than school started up again, my dog begs for food every time I take pictures of it, I haven’t been baking quite as much due to the hot weather, and oh yeah, I’m just lazy sometimes. I have a treat to make up for it though!I’ve made these healthy treats so many times over the years. I store them in my freezer and grab one (or two) whenever I’m suddenly starving but dinner is 2 hours away. You know those peanut butter balls called Buckeyes that are made with tons of butter and powdered sugar? These taste even better than those and are so much healthier!
This is the third time I’m updating this recipe with better photos and more clear instructions (because, wow, it was hard to follow before!). Mostly I was just excited to take my first food photos in our new place, which has tons of natural light. Eventually I want to update ALL of my posts with better photos, but I had to do this one because it’s so tasty. I doubled the zucchini and they turned out great! I recommend spraying your muffin tin or liners with some cooking spray, because these muffins like to stick. Don’t let that stop you though, because they’re healthy enough for breakfast but taste like dessert!
I made those Blueberry Buttermilk Donuts (which I am STILL hungry for right now) and I knew they wouldn’t be my last. But you know how you love cookies and try different varieties, but mostly you just dream finding the perfect chocolate chip cookies so you make every version of them? That’s my donut quest- I want to try to find that perfect glazed baked donuts that tastes like a fried donut. Maybe it’s not possible, but it’s worth a shot. It means I get to try endless kinds of a donut like these ones! They lasted two days, and only because I made other treats.
I have a thing about M&M cookies…something magical happens to M&M’s when they’re baked. I can’t eat a bag of M&M’s (well, the crispy ones I could), but I could eat a ton of M&M cookies. I tried this recipe first with peanut butter chips, and it was amazing. They were a little too sweet, so I changed that this time around, and added mini M&M’s to make them irresistible. The chocolate cookie is soft and melts in your mouth like a brownie. I’m hooked!
This has it all. All the chocolate. Inside and outside. There’s cocoa, melted chocolate, chocolate chips, ganache, you name it, it’s in here!
The batter was huge, the cake is huge, and it’s so soft it just melts in your mouth. I saw this recipe and instantly had a chocolate craving that could only be cured by this cake. The original called for sour cream, but I thought greek yogurt sounded better. Plus, now it’s a high-protein cake so it’s healthy!
On Sunday evening, when Michael turned on the NBA Playoffs, I went to the kitchen and mixed these up. They looked like an easy weekday breakfast, and let’s face it, I skip breakfast all the time. 15 years ago today, my dog Daisy was born. I had been begging for my own dog for 2 years. We always had a dog around, and I was usually following it everywhere, but I wanted one all for myself. I understand now why my parents didn’t get a puppy for an 8-year-old (we had two other dogs, anyways), but at the time it was the hardest struggle I faced. 🙂
I finally got my puppy, and played with her every single day. I loved her instantly. She had a fierce, independent spirit and never cared to cuddle, but she loved me back. She was my constant companion and best friend. As she grew older, she was more apt to lick me and sit in my lap. Every time I saw her, she howled in excitement and I rubbed her face, scratched her back, and told her how much I loved her.
I was able to do another cooking demo at the Farmers’ Market yesterday! I was so excited because this time I knew what I was getting into, but I had no clue what to make. I wanted to make another dessert or breakfast type food, and I needed to include an ingredient from the market. I decided to attempt crepes, which I’d never made before. I’ve always been a fan of chocolate and peanut butter. Reese’s are a bit too sweet for me, but I love making peanut butter cups myself! I just take a cupcake liner and fill it partway with dark chocolate, add a layer of peanut butter, and then top it with more chocolate. I leave them in the freezer for the perfect summer snack- there ya go, two recipes in one post. Not bad, right?
