These came together so fast, turned out great, and tasted just like a blueberry pancake, so I had to share them with you ASAP! Thankfully the sun was shining and bouncing off the fresh snow just right, so I could get some pictures before I devoured them. Jade hates it when I take pictures of food instead of eating it. She must think humans are the weirdest things ever. Poor dog.
I used to have a blueberry muffin recipe on here, but I just wasn’t satisfied with it. In my Food Prep lab last semester, we studied muffins and it was interesting to me because we were taught that muffins should be dense, small, and frankly kind of unattractive. I finally got inspired to make something today! I confess, I haven’t been in a cooking or baking mood. Mostly I just read books, clean, pack, eat, and repeat. I considered making blueberry muffins, but that sounded boring. I’d heard of strawberry donuts before, so I figured I could make a blueberry version. It worked, and they taste amazing! Cake donuts loaded with juicy berries and topped with a berry glaze. They might be the healthiest donuts I’ve ever eaten!
