Ingredient You’ll Need

  • 5 Kg easy crave lamb’s leg
  • 1 tbsp garlic and rosemary
  • 2 & 1/2 tbsp olive oil
  • 1 tsp cayenne pepper
  • 2 tbsp rock salt or to taste
  • 1 tbsp fresh ground black pepper
  • 2 tsp honey, extra
  • 1 tbsp smoked paprika
  • 100g Greek feta
  • 2 tsp oregano leaves
  • 1 Kg small potatoes (washed)
  • Aluminum foil
  • Lemon wedges (to serve)
  • Green salad, to serve (use cucumber, lettuce, green peas, or any other ingredient of your choice)

  • 1/2 cup or 125ml chicken stock
  • 1/2 cup or 125ml honey
  • 2 tsp garlic & rosemary
  • 2 tsp soy sauce
  • 3 tsp cornflour
  • 1 tbsp fresh lemon juice

Step-by-Step Instructions

1)    Prepare Your Oven/Grill

To begin your cooking, preheat the oven or grill 320°F (160-180°C) fan-forced for even heat distribution. It is a crucial step to cook tender and flavorful lamb roast and avoid sticking.

2)    Prepare & Cook Sticky Honey Glaze

Cook it over medium heat and add soy sauce, honey, and garlic & rosemary to the mixture. Then, cook and stir the mixture until it boils and thickens. 3)    Season & Roast the Lamb

Now, Rinse and pat dry the meat. Use a small knife or fork to score the skin of the lamb all over (optional but enhance the flavor profile of your meat). Then, place the lamb in a large roasting pan or tray.

Next, add and mix well extra honey, salt, black pepper, cayenne pepper, extra honey, garlic & rosemary powder, smoked paprika, and 2 tsp olive oil in a small bowl. Use your hand to rub this honey and spices mixture all over the lamb. Place the roasting pan inside the preheated oven and roast it for good 20 minutes.

4)    Toss & Season Potatoes

While your meat is roasting, peel washed potatoes and cut them into wedges.

5)    Cook Potatoes & Brush the Lamb

Then it’s time to brush sticky honey glaze over the lamb. Take out the roasting pan from the oven and arrange the potatoes around the lamb. Brush the lamb with the honey glaze. Roast the meat for another 1 hour and 20 minutes. Make sure to brush the sticky honey sauce every 20 minutes while your lamb is roasting.

6)    Rest the Roast

Once you roast the lamb perfectly, gently transfer it to a dish and cover it with a doubled sheet of aluminum foil and allow the sticky honey roast to rest for just 10 minutes in a warm place. It is an essential step if you want to enjoy tender and juicy bites of roast.
