Espresso Cupcakes

I’ve become pretty addicted to (good) coffee. I can never drink it in excess since the caffeine will make me jittery, but I drink a cup every morning now. That made me want to go back and take another look at this recipe, which never got the love it deserves from me.

I re-made them and focused on getting a good coffee flavor with plenty of chocolate notes. After reading about bacteria for my Food Fermentation class, this was a welcome distraction! I now have 11 credits for my Masters done, with 19 to go. And then, who knows, why not get a PhD?

Chocolate Chip Cupcakes

Do you ever find yourself kind of WANTING baked goodies, but no real energy to make them? Thanks a lot, winter.

One of my resolutions this year was to blog monthly. Some months I can get so many recipes created and others, I feel completely buried in work and school that I just can’t find the time or energy to bake. The gloomy winter days make me sleepy, and a recent change at work has me a little stressed.

Perfect Cookies: Chocolate Peanut Butter Chip

I just got my eyes lasered on Wednesday, but I made these on Thursday. If my bleary eyes can do it, so can you!

Laser surgery is super traumatic. I wasn’t expecting to be so stressed out. They made it sound like 40 seconds of being uncomfortable, but it was more like 10 minutes of someone messing with your eyes while you try not to hit them and run away. My stress meter was maxed out by the time they were done, and my eyes were on fire. The numbing drops weren’t very effective. I had a coworker who had it done 16 years ago, when they gave people Valium before doing it…basically, the good ol’ days!

Perfect Cookies: No Bake Cookies

nb-cookOkay, yes, there a million recipes of this out there and they all look the same. But this one turns out soft, fudgy, not sticky, and is completely perfect in every way. And they’re even better the next day!

I had to run to the grocery store before making these tonight. Worth the effort! They’re full of fairly healthy ingredients, so don’t worry when you end up eating them in excess….

Cheesecake Swirl Brownies

Cheesecake Swirl BrowniesI’m dog-sitting this week for my parents. Well, for my mom mostly, since it’s her little Maltipoo. Her name is Kiwi (the dog, not my mom) and she is a beady-eyed, fluffy doll. My dog, Jade, is not a big fan of Kiwi. Jade gets jealous very, very easily, so I have to distribute treats equally or in Jade’s favor at all times or else she mopes. I helped mom find and buy Kiwi, and now Kiwi is her baby. She’s so sweet that it’s hard not to spoil her, but Jade keeps a watchful eye! I love dogs, in case I forgot to mention that.

Chocolate Twinkie Cake

Chocolate Twinkie CakeThis is my birthday cake! I absolutely love it and have been wanting to share it for a long time. Getting pictures of these baked goods of mine is challenging in the dreary winter days (lighting sucks!), so you might have to put up with some poor quality photos right now. My goal is to share more recipes this year, so I’m going to share even the less-than-great photos. The recipes are the highlights, anyways! The recipe for this is scribbled in the back page of an old yellow cookbook of my mom’s. I’m not even sure of where she got it, but it called for a chocolate cake mix and a few ingredients for the filling. It was always a family favorite, and I used for request it for my birthday every year!

Favorite Christmas Treats (+ Cocoa Recipe)

This is one of my favorite times of the year. My birthday is on January 5th, so I guess loving winter is in my blood! Christmas and New Year’s Day used to be fairly quiet events in my life. Once my siblings got married and had kids, my family moved our Christmas to New Year’s Day and Christmas Day was spent at my in-law’s house. Christmas morphed from piles of presents to  an amazing amount of family members! This year we’re having Christmas day at my parent’s house and the day after at my in-law’s. Luckily, they only live 20 minutes apart. I’m currently buried in school, with two more finals to finish this week. Plus I get to go to the dentist on Thursday…yay. So, instead of creating a ton of Christmas recipes, I’ve been using some tried-and-true favorites, as well as a few new ones. I thought I’d share my family’s favorite Christmas treats and the changes we’ve made to them. I hope you enjoy this magical time of year!

BRUNCH

Taste Of Home Cappuccino MuffinsCappuccino Muffins. These have a hit of coffee flavor and are perfect for our traditional Christmas brunch! The swirl of cream cheese that’s been spiked with espresso powder is a must-have. The muffins themselves are loaded with flavor and mini chocolate chips for a texture that’s irresistible. My sister and I have made these for years, and we don’t have to change a thing! Source: Taste of Home

Perfect Oatmeal Chocolate Chip Cookies

Perfect Oatmeal Chocolate Chip CookiesI’ve struggled to find the perfect oatmeal chocolate chip cookie recipe for a long time. I need a crisp outside, a soft and gooey inside, fresh-tasting oatmeal cookie. It has to be lightly spiced but enough to taste it, full of chocolate, and it can’t get stale by the following day. These fit the bill! Plus, I had all the ingredients. Can’t beat that.Gooey Oatmeal Chocolate Chip Cookies Continue reading

Healthy Peanut Butter Balls

Well, it’s been awhile again! I don’t have much of an excuse for not posting more often, other than school started up again, my dog begs for food every time I take pictures of it, I haven’t been baking quite as much due to the hot weather, and oh yeah, I’m just lazy sometimes. I have a treat to make up for it though!Healthy Peanut Butter BallsI’ve made these healthy treats so many times over the years. I store them in my freezer and grab one (or two) whenever I’m suddenly starving but dinner is 2 hours away. You know those peanut butter balls called Buckeyes that are made with tons of butter and powdered sugar? These taste even better than those and are so much healthier!Healthy Peanut Butter Balls

Caramel Toffee Cheesecake

Caramel Toffee CheesecakeIt’s been awhile, hasn’t it? Sorry about that! I’ve been too lazy to bake much of anything, and all my treats have been just okay. I want to post the GOOD stuff. This definitely qualifies. I mean, it has toffee in the crust! And a layer of chocolate! Plus the cheesecake part is sooo smooth and creamy. I made it for my husband, but I’ve been loving it just as much.
