My husband, Michael, and I are looking into buying a house. We got pre-approved and started shopping online and then with a realtor. There are dozens of available homes online, but many of the ones we were interested in were already spoken for. We had to learn to let go, and know that if it’s meant to be, it’ll happen. We may not live here in Wisconsin forever, but we’re getting tired of renting and we’re ready for our own place. We’ve been renters for 6 years now!
These came together so fast, turned out great, and tasted just like a blueberry pancake, so I had to share them with you ASAP! Thankfully the sun was shining and bouncing off the fresh snow just right, so I could get some pictures before I devoured them. Jade hates it when I take pictures of food instead of eating it. She must think humans are the weirdest things ever. Poor dog.
I went to Whole Foods a few weeks ago. I only go a few times a year, because we only have 1 in the state of Iowa and it’s 45 minutes from where I live. Plus, it’s cramped and expensive. However, I do like finding some food items that I can’t seem to get anywhere else. I saw blood oranges there and had to have them- I knew I’d seen lots of bloggers making treats with them, so I figured I’d give it a try. They sat in my fridge, haunting me every time I opened the fruit drawer, for weeks…I didn’t want to waste them on a bad recipe, though!
I used to have a blueberry muffin recipe on here, but I just wasn’t satisfied with it. In my Food Prep lab last semester, we studied muffins and it was interesting to me because we were taught that muffins should be dense, small, and frankly kind of unattractive. But in America we expect muffins to be tall, fluffy, pretty, and sweet…so basically, an unfrosted cupcake. Continue reading
Since it’s past the middle of September, I feel like I can finally share these muffins with you. Even though we’re having an Indian summer and it’s been in the 80s lately. Hey, I’m not complaining though! I hate being cold. I do love fall, I just hate what comes next (other than Christmas and my birthday).
This is the third time I’m updating this recipe with better photos and more clear instructions (because, wow, it was hard to follow before!). Mostly I was just excited to take my first food photos in our new place, which has tons of natural light. Eventually I want to update ALL of my posts with better photos, but I had to do this one because it’s so tasty. I doubled the zucchini and they turned out great! I recommend spraying your muffin tin or liners with some cooking spray, because these muffins like to stick. Don’t let that stop you though, because they’re healthy enough for breakfast but taste like dessert!
I admit, before this, strawberry muffins weren’t something I’d ever considered making.
I love strawberries fresh or in ice cream, but baked? I was afraid I’d lose that sweet berry flavor! I asked for suggestions on Facebook for what to bake with all my fresh berries, and a friend suggested muffins. I said I’d give it a shot, and wow, I’m so grateful she said that! These are amazing. Proof that other people are much smarter than I am. 🙂 These are a perfect breakfast, treat, or even dessert. The glaze is sweet but adds a nice shot of flavor. You can definitely skip it, though. I’m so addicted to english muffins. If I buy a package, I end up eating them all within the week. Once they’re toasted and smeared with peanut butter, honey or jam, I cannot resist. They’re the perfect snack or breakfast! They’re so good, yet too expensive for my tastes. I’ve been searching for the perfect recipe for awhile now, and this one is really simple. I love it when I have all the ingredients at home!
Are you a morning person? I’m really, really not. My brain is all foggy and sometimes I wake up just feeling sick. Coffee makes me jittery so that’s not much help and if I eat sugar, I usually crash and am starving a few hours later. Stomach growls are kind of awkward when you’re sitting in the middle of a classroom where you’re not supposed to eat! To solve this social dilemma, I make breakfast sandwiches that are packed with protein to keep my stomach quiet until lunchtime. All you need is english muffins, some bacon, cheese of your choice, and an egg!
