M&M Pudding Mix Cookies (+ Homemade Pudding Mix)

M&M Pudding Mix CookiesI feel like I’ve been posting a lot of M&M recipes, but I checked and the only other one I have is Soft Chocolate M&M Cookies, which are actually quite amazing even without the M&M’s. Plus, this post has 2 recipes for the price of one. Jackpot!
M&M Pudding Mix CookiesI’ve wanted to make my own pudding mix for awhile now, because I knew it had to be pretty easy and much healthier than the packaged mixes. Also, I just dislike paying a few bucks for something that probably cost the manufacturer .02 cents to make. I never have powdered milk on hand, so once I bought some of that (it’s super cheap!) I was all set. I only made a half batch of the pudding mix because I really just wanted it to make these cookies. If you want more pudding recipes, check out this POST. It has 75 pudding recipes!
We’ve got everything boxed up and figured out our storage for the move across town this week/weekend. Storing all your belongings for two days because your new apartment isn’t ready but your old one needs to be vacated is a real pain, but we’re making the most of it. I rented a hotel room with a jacuzzi on the night where we have nowhere to live. 🙂 M&M Pudding Mix CookiesThese cookies were a good source of energy while I was cleaning. I put in mini chips so there was chocolate in every bite. YUM! The pudding mix makes them soft and gooey, which is basically irresistible to me! It made about 18 cookies, which is WAY too many for two people to eat in a few days, so I’ll cut it in half next time. Enjoy!

Vanilla Pudding Mix Ingredients & Directions:
½ c. sugar
⅓ c. cornstarch
⅓ c. nonfat dry milk powder
1 whole vanilla bean

In medium bowl, whisk together sugar, cornstarch, and milk powder. Split open vanilla bean and use a knife to scrape out seeds. Add seeds to sugar mixture and whisk well to combine. Place empty vanilla bean pod into an airtight container and add sugar mixture. Seal and shake gently a few times. Store in a cool, dry place. (NOTE: Can be used to make pudding, of course. Never a bad idea! Just whisk ½ c. of the mix with 2 cups of milk in a saucepan, boil, simmer for 3-5 minutes on the stove, and refrigerate.)

*Makes 18 regular-sized cookies (palm-sized)

Cookie Ingredients:
¼ c. butter, softened
¼ c. sugar
¼ c. brown sugar
1 egg
½ t. vanilla
3/4 c. flour
2 T. vanilla pudding mix
¼ t. baking soda
½ c. mini chocolate chips
½ c. regular M&M’s

Directions:
Preheat oven to 350 F. Beat butter and sugars together until creamy, about 2 minutes on medium speed. Add egg and vanilla and beat until combined. Add flour, pudding mix, and baking soda gradually and beat until combined. Stir in chocolate chips and M&Ms. Roll into 1 1/2″ balls or use a medium cookie scoop, and place on a greased or parchment-lined baking sheet. Bake 10 – 12 minutes or until golden. Let cool on cookie sheet for 10 minutes before removing to wire rack to cool completely. Or eat them hot with a glass of milk, like me!
