Who doesn’t love tiny things? At the Iowa State Fair they serve amazing mini chocolate chip cookies, very pop-able and addicting. These are like those, only better because you made them and didn’t pay an obscene amount of money for tiny cookies.
Michael suggested I make “tiny cookies and use them to top cupcakes” so naturally I made cookie dough cupcakes and used these little guys to top them. However, it turns out I only needed six tiny cookies and even though I cut the recipe in half I ended up with dozens of little cookies. Darn. Hate it when that happens, right?
Ingredients:
¼ c. butter, softened
¼ c. brown sugar
2 T. sugar
1 egg
1 t. vanilla
3/4 c. flour
1 T. cornstarch
¼ t. baking soda
¼ c. mini chocolate chips
Mix together butter and sugars in a large bowl. Add egg and vanilla and mix until combined. Add flour, cornstarch, and soda. Mix just until combined and stir in chocolate chips. Freeze until firm, about 20 minutes. Preheat oven to 350 F.
Scoop 1/2 teaspoons of dough and roll into balls. Place onto a baking sheet lined with a silpat or parchment paper. Bake for 5-8 minutes, keeping an eye on them. Press some extra chocolate chips into the tops if desired.

That’s right! They’re so addicting that I sent them with my husband to his work and they were gone in no time! But now I just want to make them again 🙂
