Skillet Cookie

Skillet Chocolate Chip Cookie

Michael asked for this by requesting a “pan of chocolate and other stuff type thing”. Somehow I interpreted that into a skillet cookie and that was exactly what he wanted. Being together for 6+ years will do that, I guess! This skillet cookie is a winner because the brown butter adds a depth of flavor, it can be made in one pan, and once finished, it’s easy to transport. That meant that when it was requested by my sis-in-law, I could bring it to Thanksgiving, where it surprisingly got eaten up (we have a ton of good desserts at Thanksgiving, but we also have a house full of hungry people, so why was I surprised?). Try this. It’s yummy.

Brown Butter Skillet Chocolate Chip CookieIngredients:
1 3/4 c. all-purpose flour
½ t. baking soda
14 T butter, divided
⅓ c. sugar
½ c. dark brown sugar
2 t. vanilla
1 egg
1 egg yolk
1 c. chocolate chips

Directions:
Preheat oven to 375 F. In a large nonstick skillet, melt 10 T butter over medium heat. Cook, whisking constantly, until foam subsides and butter begins to turn golden brown, about 3 minutes. Remove from heat. Stir in remaining butter (4 T) until completely melted. Mix in sugars, vanilla, egg and egg yolk until well combined. Add flour, baking soda and salt, mixing just until incorporated. Gently fold in chocolate chips.
Place into oven and bake until edges are golden brown but center is still moist, about 15-17 minutes.
