It’s summer, it’s hot, and we all need a healthy treat to snack on. I rarely crave fried food or heavy desserts in the summer, and baking becomes less appealing when I’d rather be outside enjoying the nice weather. These quick bites of chocolate and peanut butter solve all my issues! I’ve made these healthy treats so many times over the years. I store them in my freezer and grab one (or two) whenever I’m suddenly starving but dinner is 2 hours away. You know those peanut butter balls called Buckeyes that are made with tons of butter and powdered sugar? These taste even better than those and are so much healthier!
I just got my eyes lasered on Wednesday, but I made these on Thursday. If my bleary eyes can do it, so can you!
Laser surgery is super traumatic. I wasn’t expecting to be so stressed out. They made it sound like 40 seconds of being uncomfortable, but it was more like 10 minutes of someone messing with your eyes while you try not to hit them and run away. My stress meter was maxed out by the time they were done, and my eyes were on fire. The numbing drops weren’t very effective. I had a coworker who had it done 16 years ago, when they gave people Valium before doing it…basically, the good ol’ days!

Okay, Peanut Butter Chocolate Cherry Granola is kind of a long title, but there’s so much good stuff in here that it all needs to be noted! I first made this years ago, and recently remembered it. I can literally eat the whole thing myself, so it’s kind of good that I haven’t made it very much. It’s never great to eat a whole bowl of granola, but it is delicious!
