We made it out to a local U-pick farm just in time for strawberry season! It doesn’t last long around here, so I was super excited to get a few pounds of fresh berries. I asked Michael what I should make with our haul, and he said something with lemon sounded good. I had already planned on making these, so adding lemon was no problem!
I made seven different kinds of treats today and yesterday, but I had to share this one first. It’s my family’s favorite granola! The coconut butter gives it an amazing flavor, plus it stays together in big chunks until you want it broken down. That’s some good granola.
My mother-in-law, Lori, is super sweet and thoughtful. She adores her kids and considers their spouses to be her children, too. When I asked her what she wanted for Mother’s Day, she requested “something lemon”. I knew just what I wanted to make for her.
My mom is awesome. I remember once, when I was pretty young, it was warm and rainy out one day. She told me and Amy to take off our socks and shoes and go outside to splash in puddles in the driveway. We happily obliged! She’d always let me lick the beaters when she was baking chocolate chip cookies, let me play with her jar of buttons while she sewed, made us play dough from scratch, let us make a huge mess of it on the kitchen table, and always had hot cocoa waiting for us when we came inside from sledding. So, yeah. Awesome. Basically the kind of mother I’d want to be, if I wanted kids that is.
When I was growing up, my favorite thing to do in the summertime was invite a few friends to my house and put up a tent to go ‘camping’ in the backyard. I even learned how to put up our huge 3-room tent by myself at the tender age of 13! My best friend, Ariel, came to every little party I had. We lived a few miles from each other, which was awesome!
There are so many funny memories from the times that we went camping, ranging from shaving cream fights and water balloon wars, to re-counting nightmares about giant pudding cup men and telling scary stories. Plus, we could be as loud as we wanted, eat tons of snacks, giggle uncontrollably, and my parents enjoyed peace and quiet inside the house! Except for the time it rained and the tent leaked so we had to go inside at 4 am.
Oh, and we always had to have a cookout just to have some s’mores!
