This is my favorite little creation ever. They make me very, very happy. I even made some mini ones so I could “play around with decorating”, but really I just wanted to eat them all. So all I really did was take my two favorite recipes and make these cupcakes. Ok, 3 recipes. They’re my favorite, which is actually saying something because for as many sugary treats as I make, it’s gotta be GOOD for me to eat more than one. Or to make a recipe more than once.
When I pin things on Pinterest, I try to actually use them at some point. I try the exercises, the crafts, or the recipes and see if they’re worth keeping. If they aren’t, I delete them. For my recipes, I have a board called “Best Pinned Recipes” where I move recipes I’ve tried and enjoyed so I can use them again eventually.
Lemon Meringue Pie is my dad’s obsession. After making him at least a half-dozen pies, I made some cupcakes instead. I made an italian meringue to prevent weeping after I did a ton of research on why meringues weep (basically, they don’t get cooked because they don’t get hot enough from baking in the oven). Italian meringue tastes more like marshmallow to me, but it held up great for several days.
I had never made anything red velvet-flavored before these cupcakes. It’s not a flavor that anyone in my family asks for, but my husband’s aunt and cousin love it, so I made these for them. Anything with cream cheese frosting is a winner, but the flavor of red velvet is still kind of a mystery to me. It’s like it’s in between chocolate and vanilla somehow.
My brother loves those Limited Edition Oreos. I love making cupcakes. Thus, I made him these last fall. They’re not overly sweet or rich, just tasty little peanut butter Oreo cupcakes! Continue reading “Reese’s Oreo Cupcakes”
