Coconut Cupcakes

Finally, a coconut cupcake that worked. One that doesn’t have that weird, subtle coconut flavor that makes me go “meh.” This isn’t overwhelming, but it is COCONUT and delicious. Like coconut cream pie!

I have made 4 different recipes for food/treats in the last few days, and they all failed. I even spent 5 hours working on a bread that ended up doughy in the middle. It was all so very, very frustrating, so I gave up on Pinterest recipes and went to the library. I loaded up on cookbooks and food magazines, plus a few health-related ones. Espresso Cupcakes


I’ve become pretty addicted to (good) coffee. I can never drink it in excess since the caffeine will make me jittery, but I drink a cup every morning now. That made me want to go back and take another look at this recipe, which never got the love it deserves from me.

I re-made them and focused on getting a good coffee flavor with plenty of chocolate notes. After reading about bacteria for my Food Fermentation class, this was a welcome distraction! I now have 11 credits for my Masters done, with 19 to go. And then, who knows, why not get a PhD?

Chocolate Chip Cupcakes

Do you ever find yourself kind of WANTING baked goodies, but no real energy to make them? Thanks a lot, winter.

One of my resolutions this year was to blog monthly. Some months I can get so many recipes created and others, I feel completely buried in work and school that I just can’t find the time or energy to bake. The gloomy winter days make me sleepy, and a recent change at work has me a little stressed.

Cocoa & Marshmallow Cupcakes

I’m going to pretend like it hasn’t been forever, skip all the rambling and excuses for not blogging, and dive right in. These are worth the wait, I promise!

My mom always made cocoa in a big pot on the stove while we went sledding in the backyard (we had the perfect sledding hill). I helped her a few times when I was little, and then started making the recipe in a cup for myself almost every morning. This is is my 50th blog post! I’m so happy to have started this little collection of favorite recipes and random thoughts. It’s been so much fun to take pictures of treats and share them with you! I love talking to people from new places and discovering new blogs. I’m hoping to keep doing this for a long time! To celebrate this tiny milestone, I made these cupcakes. I took pictures of them, and then I shoved them into my mouth. SO GOOD!
