This is the third time I’m updating this zucchini muffin recipe with better photos and more clear instructions (because, wow, it was hard to follow before!). Mostly I was just excited to take my first food photos in our new place, which has tons of natural light. Eventually I want to update ALL of my posts with better photos, but I had to do this one because it’s so tasty. I doubled the zucchini and they turned out great! I recommend spraying your muffin tin or liners with some cooking spray, because these muffins like to stick. Don’t let that stop you though, because they’re healthy enough for breakfast but taste like dessert!
I made those Blueberry Buttermilk Donuts (which I am STILL hungry for right now) and I knew they wouldn’t be my last. But you know how you love cookies and try different varieties, but mostly you just dream finding the perfect chocolate chip cookies so you make every version of them? That’s my donut quest- I want to try to find that perfect glazed baked donut that tastes like a fried donut. Maybe it’s not possible, but it’s worth a shot. It means I get to try endless kinds of a donut like these ones! They lasted two days, and only because I made other treats.

I have a thing about M&M cookies…something magical happens to M&M’s when they’re baked. I can’t eat a bag of M&M’s (well, the crispy ones I could), but I could eat a ton of M&M cookies. I tried this recipe first with peanut butter chips, and it was amazing. They were a little too sweet, so I changed that this time around, and added mini M&M’s to make them irresistible. The chocolate cookie is soft and melts in your mouth like a brownie. I’m hooked!
This has it all. All the chocolate. Inside and outside. There’s cocoa, melted chocolate, chocolate chips, ganache, you name it, it’s in here!
The batter was huge, the cake is huge, and it’s so soft it just melts in your mouth. I saw this recipe and instantly had a chocolate craving that could only be cured by this cake. The original called for sour cream, but I thought greek yogurt sounded better. Plus, now it’s a high-protein cake so it’s healthy!
On Sunday evening, when Michael turned on the NBA Playoffs, I went to the kitchen and mixed these up. They looked like an easy weekday breakfast, and let’s face it, I skip breakfast all the time.
