I know that I have a few good donut recipes already, including one that’s similar to this- Chocolate Glazed Donuts– and they’re very good, but this one’s the best. It just is. You can make any kind of glaze for it, make it in a muffin pan, put whatever mix-ins you desire in the dough (Coconut? Sprinkles? Why not?), and it’s going to turn out perfectly. It’s summer, it’s hot, and we all need a healthy treat to snack on. I rarely crave fried food or heavy desserts in the summer, and baking becomes less appealing when I’d rather be outside enjoying the nice weather. These quick bites of chocolate and peanut butter solve all my issues! I’ve made these healthy treats so many times over the years. I store them in my freezer and grab one (or two) whenever I’m suddenly starving but dinner is 2 hours away. You know those peanut butter balls called Buckeyes that are made with tons of butter and powdered sugar? These taste even better than those and are so much healthier!
I love muffins. Obviously, judging by all my recipes (favorite one is still the blueberry muffins, although these cherry ones are a close second!) Some people get inspired by great restaurant meals and try to recreate the same thing at home. I don’t try to compare to those talented chefs. One of my resolutions this year was to blog monthly. Some months I can get so many recipes created and others, I feel completely buried in work and school that I just can’t find the time or energy to bake. The gloomy winter days make me sleepy, and a recent change at work has me a little stressed.

How is Christmas next week?? I don’t understand it. I decorate for Christmas (well, I decorate the tree while my husband does everything else), I make cocoa and fudge and drink eggnog, but Christmas just never hits me until it’s here, but it’s okay, I still soak it all in. Michael and I get each other lots of presents because we’re really just large children, and we always wait until after his birthday (the 19th) to open them. After our celebration, we’ll head down to our parents’ houses in Iowa. They only live 20 minutes apart, so that’s pretty handy, and we usually split our time between the 2 houses. This year, both our families are having Christmas on New Year’s weekend, so we’re mainly going to relax on Christmas weekend, other than some grandparent visits. I get a lot of time off work and Michael’s done with school for the semester, so it should be a nice Christmas vacation! I do a treasure hunt for the kiddos on my side, and we always decorate Christmas cookies.
