Chocolate Twinkie CakeThis is Chocolate Twinkie Cake is my birthday cake! I absolutely love it and have been wanting to share it for a long time. Getting pictures of these baked goods of mine is challenging in the dreary winter days (lighting sucks!), so you might have to put up with some poor quality photos right now. My goal is to share more recipes this year, so I’m going to share even the less-than-great photos. The recipes are the highlights, anyways! The recipe for this is scribbled in the back page of an old yellow cookbook of my mom’s. I’m not even sure of where she got it, but it called for a chocolate cake mix and a few ingredients for the filling. It was always a family favorite, and I used for request it for my birthday every year!

Rich Chocolate Bundt Cake- a massive cake for massive chocolate lovers!

The batter was huge, the cake is huge, and it’s so soft it just melts in your mouth. I saw this recipe and instantly had a chocolate craving that could only be cured by this cake. The original called for sour cream, but I thought greek yogurt sounded better. Plus, now it’s a high-protein cake so it’s healthy!

Greek Yogurt Coffee Cake- moist, tender cake with a streusel ripple will make everyone happy!

Memorial Day weekend flies by way too quickly. I lost my aunt Diann on Thursday, and it was such a shock that I baked away on Friday to distract myself. We left for family camp on Friday evening and just got back home on Monday afternoon, so it sank in slowly. She would have been 69 on Saturday, and she was always smiling. I miss her already! One of the last things she told me was that she loved my blog. Now every time I’m baking or blogging, I think of her and it makes me smile. It’ll be a long time of healing for my family, but we’ll get through it together as always.

I use Pinterest as a tool for finding new recipes, mostly. I can’t make a recipe unless I can see a picture of it, so Pinterest is like a lovely internet image search of fabulous recipes. Naturally, of the many I try, not all are winners. I adjust recipes all the time to suit what I have on hand or my personal preferences.
