I got the base for this Monster Cookie Bar recipe from a coworker and adjusted it slightly. I liked how quickly they came together and how chewy they ended up being, so I had to share! They’re very gooey when they’re warm but set up nicely in a few hours. Hope you get to spend time with loved ones on this special weekend!
We’ve packed 2 vehicles with bedding, clothes, and will load up the cheese tomorrow! We’re heading back to Iowa for the long weekend. I’m bringing these delicious cookie bars to Michael’s family get together. They rent a campground and we have a blast swimming, boating, playing games and catching up! It’s always a good time, especially since I know some of his cousins from when we were all teenagers. I try to help out in the kitchen when possible, including bringing some snacks to put out on the giant dessert table.
Monster Cookie Bars
Oats, peanut butter, and M&M's collide to make a fantastic cookie bar that's almost healthy!
- 1/2 cup butter
- 1 cup brown sugar
- 1 1/2 cup peanut butter
- 3 eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 4 1/2 cups old fashioned oats
- 1 cup chocolate chips
- 1 cup mini M&M's
Preheat oven to 350 F. In a large saucepan, combine the butter, brown sugar, and peanut butter. Heat on medium and stir until melted and combined, about 3 minutes. Remove from heat. Add eggs and vanilla and stir until smooth. Add baking soda and oats and stir well to coat oats. Stir in chocolate chips and mini M&M's. Pour batter (it may seem dry) into 9x13 pan and press down with wet spoon or hand. Add more M&M's on top if desired. Bake for 15-20 minutes or until golden brown. Cookies will still be soft. Let set for 30 minutes before serving. Store covered at room temperature for up to 3 days.
