No-bake summer treats that taste even better than the rice krispies version!

I made it home from Indiana! It was quite the road trip, but luckily my husband makes every trip fun. We had dozens of CDs to listen to, and once we get talking, no topic is off-limits. The time flies by! I drove the whole way home while he slept.

There were 125 people at the family reunion we attended on Saturday. I think I knew 20 of them? Maybe? But it was fun! We played yard games, tossed the football, watched the kids play on a very tall slide, and ate a ton of amazing food. What do you bring to a family reunion that will last through several car rides and taste good 2 days after it’s made? These. Make these.

These all got eaten (pretty sure I ate 5 or 6…heh, whoops) once I un-buried them from the dessert table. They were kind of fun to make, actually. I think kids would be great at it. You just make it like rice krispies treats but scoop piles of the cereal onto wax paper. The chocolate/butterscotch topping gives you all the sweetness you need, which is why I removed the sugar (1 cup!) completely. It wasn’t necessary.

I hope you give these a shot! I’ll be making them again when I need a transportable dessert. Or when I need some peanut butter-chocolate-butterscotch, so maybe tomorrow. 🙂 I’m off to pick strawberries at a local U-pick farm now!

Ingredients:
6 c. Chex cereal
1 c. light corn syrup
1½ c. peanut butter
1 c. semi sweet chocolate chips
1 c. butterscotch chips

Directions:
In a large bowl, pour in Chex cereal. Set aside. Line two baking sheets with wax paper. In a medium bowl, add corn syrup and microwave it for ~1 minute, until warm. Remove and stir in peanut butter until combined. Pour over cereal and fold together. Use a large cookie scoop to drop cereal onto wax paper, gently shaping with a spoon to press together. In a small bowl, microwave together chocolate chips and butterscotch chips in 30 second intervals, stirring between intervals. Once smooth, pour a tablespoon or so over cookies. Allow to cool completely at room temperature. They will stay fresh for up to 4 days, and they’re even better when they’re cold from the fridge or freezer! Enjoy.
