It’s summer, it’s hot, and we all need a healthy treat to snack on. I rarely crave fried food or heavy desserts in the summer, and baking becomes less appealing when I’d rather be outside enjoying the nice weather. These quick bites of chocolate and peanut butter solve all my issues! I’ve made these healthy treats so many times over the years. I store them in my freezer and grab one (or two) whenever I’m suddenly starving but dinner is 2 hours away. You know those peanut butter balls called Buckeyes that are made with tons of butter and powdered sugar? These taste even better than those and are so much healthier!
It’s been awhile since I’ve posted, sorry about that! Summer is flying by, and I’m enjoying every minute of it. I have 3 recipes to share with you, but I had to start with this: it’s a nice, smooth coffee ice cream that’s not too strong, mixed with ground hazelnuts. It even has cream cheese in it, so you know it’s gotta be good!

Before this, I was pretty sure I just plain sucked at making ice cream. Even if it was good straight from the ice cream machine, by the next day it was always a rock-hard chunk and then it turned straight to freezer burn. Finally I drew on my food prep lab knowledge and added a bunch of fat and sugar. Ta-da! Creamy ice cream that’s as easy to scoop as the store-bought kind. Also, it tastes amazing. So much strawberry flavor! Did you know that ice cream actually needs a lot of sugar to keep the ice crystals small?
