Pecan Spice Cookies

These pecan spice cookies are what would happen if you crossed a Pecan Sandie with an oatmeal cookie I think. They’re crisp on the outside, chewy in the middle, and packed with spice that doesn’t overwhelm. Fall has become my new favorite season thanks to all the gorgeous trees up here in Wisconsin and plenty of sunshine. Pecan Brownie Bites

I had almost given up on these Pecan Brownie Bites. I made 3 different attempts and they all turned out close, but not perfect. They either ended up gooey and stuck to the pan (but tasted AMAZING) or they popped right out and were dry and lifeless in the flavor department. Coconut Cupcakes

Finally, a coconut cupcake that worked. One that doesn’t have that weird, subtle coconut flavor that makes me go “meh.” This isn’t overwhelming, but it is COCONUT and delicious. Like coconut cream pie!

I have made 4 different recipes for food/treats in the last few days, and they all failed. I even spent 5 hours working on a bread that ended up doughy in the middle. It was all so very, very frustrating, so I gave up on Pinterest recipes and went to the library. I loaded up on cookbooks and food magazines, plus a few health-related ones.
